最近在找不用加凝固剂的巧克力慕斯方子,好把同事们送的黑巧妥善处置,无意间就遇到了这款看起来高大上做起来却十分简单的配方,来自法国厨神Raymond Blanc。抄送 @颜一 

在BBC网站上找到方子简单翻译如下:

IngredientsFor the chocolate mousse 用料:

  • 170g/6oz good-quality dark chocolate, minimum 60 per cent cocoa solids, roughly chopped 上等黑巧(可可含量60%以上)170克,粗切备用。

  • 7 free-range egg whites 7个蛋清(译者:略奢侈)

  • ¼ tsp lemon juice 少许柠檬汁

  • 40g/1½oz caster sugar 40g白砂糖

Preparation method 做法:

  1. Melt the chocolate in a heatproof bowl set over a pan of simmering water (do not allow the base of the bowl to touch the water).将黑巧隔水融化,厨神提醒千万别让盛着巧克力的碗底碰到底下的热水。(译者:我以前都直接把碗直接坐锅里来着....)

  2. Whisk the egg whites and lemon juice in a large, clean bowl until they form soft peaks. The lemon juice will stabilise the egg whites, make them easier to work with and help to prevent over-whisking. 在蛋清中加入少许柠檬汁,(译者:这个混合物将成为慕斯体)打发,直到打蛋器拎出“柔软”的尖尖。

  3. Add the sugar and continue to whisk until firm peaks form when the whisk is removed. Do not whisk beyond this stage - the egg whites will start to collapse and separate into dry froth and runny liquid, and you'll lose all the air that you've whisked in.

  4. When the chocolate has melted, remove the bowl from the heat. Whisk one-third of the egg whites into the hot chocolate quickly and vigorously, until thick and well combined - if you add the egg whites in too slowly, their cold temperature can make the hot chocolate seize, solidify and result in a lumpy mousse.

    巧克力完全融化就可以拿出热水,拨1/3蛋清糊到热巧克力酱,迅速搅拌均匀(译者:这步一定要快,否则后果自负)

  5. Fold the remaining egg whites into the chocolate mixture, using a spatula, until all of the egg white has been completely incorporated into the chocolate. Don't overmix at this stage as you'll knock out the air bubbles and the mousse will be dense.

    接着把剩下的蛋清糊倒入巧克力蛋清混合糊糊里,用铲刀搅拌直到两者完全混合均匀,不要过分搅拌不然可能会消泡,就是把蛋清糊里的气泡都赶跑了,做出来的慕斯就不会蓬松啦!

  6. Spoon the mousse mixture into four Martini glasses. Chill in the fridge for 2-3 hours, or until set.

    用勺子把刚刚搅拌均匀的巧克力糊糊盛进马爹利酒杯(译者:家里只有饭碗行不行?行!)然后放进冰箱冷藏(译者:不是冷冻)2-3小时。


大厨说:就是这样非常简单,不管让什么样的厨师来做,10分钟就做好了,但这十分钟相当值得。

嗯,我觉得我30分钟可以搞定吧,这30分钟也会相当值得。方子有了,接下去就看啥时候有心情了。
